Ama Pachana’s Celery Root Vegetable Rice

Celery root is one of the tubers with the least amount of starch, and a distinctive hydrating sweetness that’s easy to fall in love with. In this recipe we combine it with chayote, which is made up of more than 80% water, is abundant in electrolytes and minerals and is neutral in flavor. Nutritionally, chayote is key for supporting the kidneys, and it gives this recipe a soft texture.
As celery root and chayote are the main ingredients, you will be bringing a lot of hydration and fiber to your system, perfect for promoting the natural cleansing of the intestines and regulating body temperature this summer season. Celery Root Vegetable Rice
for 2-3 persons
Options to add or vary:
1 tsp Grated fresh ginger
½ tsp Grated fresh turmeric
1 tsp Fennel seeds
1 tbsp Lemon juice
Ingredients:
1 ½ lbs Celery root, shelled
1 Small chayote
¼ White or Yellow Onion
¼ Yellow Pepper
1 Garlic (clove)
1 Tbsp Coconut Oil
1 tsp Coriander Seed powder
Salt to taste
Process:
1. Peel the chayote and celery, and cut into small pieces.
2. In a food processor, mash the celery root together with the garlic, onion and pepper until you’ve obtained a small texture similar to that of rice.
3. In a nonstick skillet, heat the oil over medium high heat.
4. Add the spices to the oil, infusing the oil with their benefits.
5. Add the processed celery and sauté for 5 minutes, stirring constantly.
6. Process the Chayote until you get a fine mince and add to the pan.
7. Add the salt and cook for 2-3 minutes, or until the celery is soft. Ready!
How to combine or use this recipe?
You can use this Celery Root Vegetable Rice wherever you would use regular rice, combined with beans or other legume stew. You can also incorporate it into romaine lettuce tacos, coconut tortillas, soups and stews, grain salad, and more!
